I already used “Baby It’s Cold Outside” as a title this week, but it would definitely fit for today too! Brrr. I am not loving how cold it is outside. On a more positive note, it’s What I Ate Wednesday with Peas and Crayons. Weather like this makes me love warm, comfort food that much more. I have been reluctant to make chili this year because beans, onions, and garlic are definitely not FODMAP friendly. Many, many chili recipes call for oodles of beans, onions, and garlic which my stomach cannot handle. As I was pinteresting away my evenings last week, I came across Lee’s (FitFoodieFinds) Lazy Girl Turkey Salsa Chili. Double score as her recipe was easily adaptable to my diet needs and easy to make!
Turkey Mushroom Chili
- 1 lb. ground turkey
- 1 can white northern beans
- 1 jar Newman’s Own Medium Salsa (or salsa of choice)
- 1 can diced tomatoes
- 8 oz sliced portabella mushrooms
- 2 TB chili powder
- 1 TSP paprika
Brown the ground turkey in a skillet, then combine with all ingredients in a slow cooker. Set on low for 7-8 hours. Enjoy!
The mushrooms make a great “meaty” replacement for beans. It was so yummy that it didn’t last long around our house. Chili is super convenient to take to work for lunch throughout the week too. Hubby gave it a thumbs up, so I will likely be making this a lot more often this winter!
Other eats this week:
I had a BOGO free bowl of Noodles to use up last week, so on Friday I tried their Japanese Pan Noodles for the first time. I thought it tasted good, but could’ve had more veggies in it. I loved the thick noodles though, so next time I’ll just ask for more veggies.
This may look like a breakfast meal, but some nights when I don’t feel like cooking I make an egg white sandwich. I cook 2 egg whites and top with kale/spinach/turkey bacon on a sandwich thin spread with a Laughing Cow wedge. It’s simple, but filling and always makes my belly happy.
Is there anything better than yogurt with berries?! This mix of fiber and protein is one of my favorite snacks. I love Fage 0% greek yogurt topped with frozen mixed berries and KIND Oat Clusters with Flax granola.
Have a wonderful Wednesday. I will be trying to breathe through my nose as contracted another cold. I guess one of the downfalls of working in a school is all the germs I come in contact with. It’s so hard to keep my Ipad and table clean. Crossing my fingers I get over this cold as soon as the last one!
